Nine years of the same morning

Marco mixes before the street wakes up. Elisa opens the door, wipes the copper, puts the first round in. We are not a chain packet. We are a couple who wanted an oven on Clinton Street and kept it.

The commercial wood-fired deck we cook on. Hands stretching pizza dough on the bench.

Pies people actually reorder

The board lives on Menu. Margherita, hot soppressata, Marco’s sausage, a white pie with ricotta. Wings if you are staying. Dips if you are not sharing crust politely.
